Drying program for mushrooms
- Initial drying period: The drying temperature cannot be too high or too low, it should be kept at 35°C, which is appropriate, for 3 to 4 hours. The temperature gradually increases to approximately 40°C.
- Constant speed drying period: After 4 - 5 hours of drying, the temperature will gradually increase to approximately 50°C. At this stage, the general drying time is 3 - 4 hours.
- Decelerated drying period: After 8 - 9 hours of drying, the temperature will gradually increase to 55 - 60°C. At this stage, the general drying time is 1 - 2 hours.
- Force drying and complete drying period: In the last hour the temperature should be controlled between 60 - 65°C.
Precautions for drying mushrooms
- Heating and cooling should not be too fast. Otherwise, the wrinkles of the fungus cover will be affected.
- The highest temperature should not exceed 65°C, otherwise it is easy to burn.
