What is the process for drying strawberries using TROCKNNER dryers?
The drying process with TROCKNNER equipment allows strawberries to be preserved for longer and to take advantage of their flavor and nutritional value even outside the growing season. Proper drying prevents the proliferation of bacteria and fungi, ensuring quality and food safety.
In Chile, the strawberry industry has experienced significant development. The favorable climate and soil in certain regions of the country make it possible to produce strawberries of excellent quality. The export of Chilean dried strawberries has increased, thanks to its intense flavor and the global demand for healthy and natural products.
Globally, the strawberry industry has become an important sector due to the health benefits associated with its consumption. Strawberries are rich in antioxidants, vitamin C, and fiber, and have been shown to promote cardiovascular health and cognitive function.
Proper drying of strawberries ensures that their valuable nutrients and organoleptic properties are preserved. Drying techniques using specialized equipment allow obtaining high-quality dried strawberries.
Before drying the strawberries:
- Selection of raw material: Choose large and beautiful strawberries.
- Cleaning: Pour strawberries under running water and rinse thoroughly to remove sediment and other sundries.
- Remove the stem from the fruit: Please handle it carefully when removing the stem from the fruit and remove impurities and ungraded fruits at the same time.
- Boiling Sugar: Prepare a 40% sugar solution, add the strawberries, then bring to the boil for 10 minutes. After cooling, take it out, put it in a prepared container and tint it with sugar in a 40% sugar solution, for 6 - 8h.
- Filtering: Take out the strawberries soaked in sugar, place them on a strainer and drain the sugar for 30min.
Drying stage
Place a single layer of strawberries on the tray, insert the tray into the dryer. The drying method is first at high temperature and then at low temperature.
The program has three sections.
- In the initial stage the temperature is 60℃. The temperature increases inside the chamber and the product for 2 hours evenly.
- When the temperature rises to 75℃, please do continuous high temperature dehumidification for 10 hours.
- When the temperature of the strawberry dryer drops to 62℃, it takes 6 hours to continuously discharge the moisture, and then the drying process can be completed.
