BANANA DRYING

BANANA DRYING

Dehydrating food is an easy and practical solution to keep it longer and keep all its nutrients. In addition, it is a very versatile process that allows you to make multiple recipes and enjoy its flavor at any time of the day, since dried fruits can be used in salads, desserts, granolas, or you can even eat them as snacks!

Tips for protecting the color of plantain chips

Plantain meat contains phenolic substances, which can cause browning during processing and storage of finished products. To obtain a product with a good color, it is necessary to carry out a color protection treatment. Dip the banana slices in lemon juice. This can improve the flavor and increase the vitamins, but the main goal is to prevent the bananas from turning brown.

Drying Temperature Guide for Plantain Chips

Bananas are high in sugar during the drying process.

  • If the temperature is too high, for example when it reaches 80 degrees Celsius, it will cause the sugar to caramelize.
  • If the temperature is too low, the drying time will be too long, neither of which meets the requirements.
  • Therefore, the drying temperature should be controlled at 60-65°C, and drying should be completed in 18-20 hours. The moisture content of the finished product is required to be 13-16%.

As soon as they are completely dry and crunchy, you will have your dehydrated banana ready to enjoy. Store it in an airtight container to keep them for months.
